Prepare
For 1 litre of ready-to-serve cocktail mix:
400 ml DRAGMA Vermouth Red Sweet
400 ml Port Rose wine
200 ml honey cordial
¾ cup of honey
2 cups of water
¾ cup of brown sugar
Zest of 2 lemons
Combine all the ingredients in a saucepan and bring to the boil. Allow the cordial to simmer for 10-15 minutes until the mixture is amber in colour and has thickened to a syrupy consistency.
Remove from the heat and allow to cool completely. Once cooled, strain the lemon zest out and pour the cordial into bottles. Keep refrigerated.

How to mix it
Pour all the ingredients into a whipping syphon.
Attach an N2O cartridge and leave in the fridge for 24 hours.
Pour the chilled and ready-to-serve cocktail into serving glasses garnished with dried strawberries.
